Issur Danielovitch Demsky nació el 9 de diciembre de 1916 en Amsterdam, Estado de Nueva York. En 1946, a los 30 años de edad, y ya con una cierta fama cosechada en Broadway, Lewis Milestone le propone como primer actor en el film El extraño amor de Martha Ivers, donde se revela como un actor de carácter. En 1949, interpreta un boxeador en la película El ídolo de barro de M. Robson, donde por su realista interpretación es nominado al Óscar al mejor actor. Otra de sus famosas actuaciones y para la que fue nominado para Mejor Actor por tercera vez fue en El loco del pelo rojo, donde caracteriza al pintor Vincent Van Gogh.
Intervino tanto en comedias como en dramas y ha encarnado personajes duros pero de fondo muy vulnerable: El ídolo de barro (M. Robson, 1949), Brigada 21 (W. Wyler, 1951), Cautivos del mal (V. Minnelli, 1952), Otra ciudad, otra ley (J. Kanew, 1986), Oscar (J. Landis, 1991), Diamonds (1999). Ha participado en numerosas producciones para televisión y en 1988 publicó su autobiografía (El hijo del trapero).
